Pedro Ximenez (AKA PX) is a grape typically grown in Spain and is used to create sweet sherry. This PX, though, comes from Chile and is DRY, crisp, and clean – as far from the sweet sherry as you can get.

We get nice almond notes on the nose with quince and citrus, pretty stony minerality and nice acid. Lingers on an interesting dry sherry note with a dash of salt. An intriguing twist to an interesting grape.
