It has thick skin and needs lots of warm sunshine to ripen fully (sounds like us). It retains lots of natural acidity and is typically has big tannins as a youngster. So, we applaud Eos Estate for creating a lovely Petite Sirah with ripe blackberries, raspberries, black currents, licorice, and mouth drying tannins. To give it structure and texture, the wine is aged in new and old oak barrels. For softer tannins, decant for 2-3 hours. Still settling in. Try it with: Kifta, beef stroganoff, vegetarian lasagna, roasted venison with blackberry compote |
