Christophe Thorigny farms 10.5 hectares in the village of Parcay-Meslay, one of the eight villages included in the Vouvray appellation. His family has owned vineyards in the village for four generations farming according to the principle of “lutte raisonnée” or minimal intervention and keeps his yields low.
For this bone dry Vouvray we get lovely notes of green apple and yeasty bready notes on the nose.  More of the same on the palate with nice weight in congruence with good acidity that makes this bubbly so food friendly and just plain charming.

Cava is Spain’s ‘champagne’. This lovely Brut Nature (the driest classification for a sparkling wine) is made using two red grapes, Trepat and Garnacha, which are responsible for its beautiful color.  
This lovely bubbly is a bone dry, traditional-style cava with pure fruit of  black cherry, pomegranate and raspberry, a touch of pepper, light yeasty bready notes with the fine bubble finishing crisp and clean.

Larry Mawby has been producing fine wines in the Leelanau Peninsula since 1978, this Blanc de Noir is another sophisticated example. 100% Pinot Noir that is hand-picked and whole-cluster pressed, fermented in stainless steel then blended with reserve wines and fermented a second time in the bottle.

Peach and apple combines with touches of yeasty bready notes reminiscent of true Champagne along with delightful crispness and fine bubbles.

Aromas and flavors of spiced apples and pears combine with a delightful crispness. If you haven’t tried a Michigan sparkling wine, we highly recommend this one.     
Try it with: Hors d’oevures, pan fried whitefish, Waldorf salad, Apple tart and, like champagne, it goes with almost anything.
